When those beautiful sugar pumpkins come to market I can hardly contain myself. I must get a few. Pumpkin is one of those ingredients that just makes everything better, as if they are smiling at you, ready to make your food shine. With no exception, the pumpkin in my baked pumpkin french toast really did make this recipe shine, along with it’s buddy, the chocolate chip. Aah, pumpkin and chocolate, love this combination. Yes I am at it again. Every now and then, well more now than then, my nutritionist side takes a long day off. Though I feel eating healthy is so important for optimal health, I do also feel one needs to have foodie indulgent experiences. Every now and then we love to make a huge batch of granola, a treat for the kids “plain old yogurt” as they say. It’s tough finding a granola that is allergen free without a ton of sugar or other stuff, so we make it from scratch at our house. I love a good quiche, especially for brunch. And I certainly do not get up at the crack of dawn to make one. I make the crust the day before, then finish the dish in the morning. I am all about making whatever I can ahead of time. How else can I maintain a sense of sanity with four boys!! My 11 year old hates eggs. I love how easy it is to make these Strawberry Chocolate Chip pancakes when they’re baked in the oven! Spoon them on the baking sheet, bake them in the oven while I put everything away and clean up is so nice! I don’t feel like a short order cook. You know the feeling, standing there flipping over and over especially for a big family like ours. We got some sweet berries at the farmer’s market that I thought would be fun to put into pancakes.
