Salted Peanut Butter Chocolate Tart – gluten free, soy free, vegan

February 13, 2014

When I think of Valentine’s Day I think of chocolate. When I think of Valentine’s Day I think of chocolate. Rich, dark, sinful chocolate. But for me. that’s not enough. I need to add more, as if chocolate wasn’t enough. Hey, why not let’s add peanut butter with a sprinkling of some salt and call it a salted peanut butter chocolate tart, it’s Valentine’s Day! That was the only name I could think of, not terribly clever huh. Whatever the name is, this sweet, salty, crunchy, creamy chocolate tart will have your partner on their knees. Now is the perfect time for any much-needed bribery. It’s that good. And so worth fussing over in the kitchen, selfishly speaking. Pardon me … Continue reading

To conclude my Oatmeal Cranberry cookie post, here is the next recipe of my holiday cookie trio. This red velvet crinkle cookie recipe was new for me, fortunately a risk work taking. I know, just before the holidays, crazy right? But they came out spectacular! I saw this recipe on Pinterest (gosh I love that visual place) by blogger Cooking Classy, and thought I must try that recipe. But I wanted to take it a step further by also making it egg free, for my hubby who is cutting back on eggs. The rest for gift giving. My trio of holiday cookie gifts also includes ginger cookies, recipe is on the way… As you probably know by now, I do … Continue reading

Holiday Cookies – Oatmeal Cranberry with Orange Glaze

Even though we celebrate Chanukah, which was weeks ago, I am always baking cookies during this time of year. Dozens and dozens of cookies that I give as gifts. It definitely makes baking easier when I make the cookie dough for each recipe a week ahead of time and freeze. I wrap each dough separately in wax paper and drop it into a freezer bag for freezing. I label each bag and put the date on it (who can remember?) then continue a week later with the easy part-scooping and baking. I baked three holiday cookies this week that I think you will love. Ginger Cookie dipped in Dark Chocolate (vegan), Oatmeal Cranberry Cookies with Orange Glaze, and Red Velvet … Continue reading

I love my family dearly, but they are the type of family where they think what would just a little bread do. Yep, that’s my family. So this is what I did. I cooked the food that typically would have gluten or dairy a week ahead and freeze. Things like the stuffing/dressing, sweet potato mash, and cornbread (we don’t eat corn normally so it’s a treat, non-gmo of course). Oh, and desserts, like these sweet irresistible raspberry thumbprint cookies. Then … Continue reading
